The Best Einkorn Pancake Mix
Einkorn flour is much easier to digest, and has a delicious nutty flavor. My kids love this healthier version of pancakes! I keep a jar of the best einkorn pancake mix in my pantry at all times. Just mix with water and enjoy!
I came across Einkorn wheat a while ago, when I was researching about gluten intolerance. I learned that Einkorn is an ancient wheat that hasn’t been modified like regular wheat has, and it is much easier to digest. Upon learning this, I decided to get some and try it out. Baking with einkorn is a bit different than regular flour, but it is more tolerable for people with gluten sensitivities.
I have made it my goal to switch over to Einkorn flour for the most part, and it has not been a disappointment! I love the nutty taste of Einkorn, and my kids eat it all up. They love these pancakes! I make them as sheet pancakes to save time and a mess, but they can also be made like regular pancakes on a griddle!
Just Add Water Pancake Mix
This pancake mix is very versatile! Usually I will add natural sprinkles on top for my kids, but they also make great sourdough pancakes! Just add a little bit of regular sourdough discard, since it’s fermented and also easier to digest. You could also make these gluten-free by substituting regular flour for an all-purpose gluten-free flour. Fresh or frozen berries are a great addition to these pancakes as well!

- Einkorn flour (whole wheat Einkorn is fine, I prefer the all-purpose Einkorn)
- Powdered whole milk
- Organic sugar
- Baking powder (aluminum free)

Steps for making homemade einkorn pancake mix:
To make homemade Einkorn pancake mix, all you need to do is gather your ingredients, measure them into a mixing bowl (or the container you plan on storing them in) and then mix well! It’s so easy, and the ingredients are simple!
I store mine in a gallon-sized glass jar, and it keeps well for a couple of months. Usually we go through it quicker than that though! When making pancakes, just put some in a bowl, and add some water until it’s the right consistency! No measuring required! It makes for quick and easy breakfast, and you can make as many or as little as you’d like!
I like to add natural sprinkles or fresh berries on top of mine, and cook them on a sheet pan in the oven. This makes for less of a mess and a super easy breakfast! To make this into sheet pan pancakes, put a piece of parchment paper down on a baking sheet, spray with some non-stick spray or avocado oil, and put it in the oven at 350 degrees Fahrenheit for about 10-15 minutes!

Ingredients
- 4 1/2 cups All-purpose Einkorn flour (whole wheat Einkorn or GF AP flour can be substituted 1:1 as well)
- 3/4 cup Powdered whole milk
- 1/3 cup Granulated Sugar
- 2 tbsp Baking powder
- 1 tbsp Baking soda
- 1/2 tsp Salt
Instructions
- Add all of the measured ingredients to the mixing bowl.
- Whisk together until well combined.
- Pour into airtight container and label.
- When you are ready to use, just pour some into a bowl and add water until it is the right consistency for pancakes. If you like fluffy pancakes, make the batter thick, if you like thin pancakes, add water until the batter is thin.

Yes, swap out the flour 1:1 with a gluten free all-purpose flour, it has worked for me!

I don’t measure the water, just add a little at a time until the batter is easy enough to dollop onto a griddle, or spread onto a baking sheet.
